A record....

I believe it is official.  A new record high temperature for our area was set on Monday - 97 degrees! Summer must really be here!

Here is another good recipe for a summer day.


It also made the trip to the church covered-dish luncheon, and there were some leftovers to bring back home.  

It is a Weight Watchers recipe, and we have enjoyed it several times for the past few years.


Rather than the capellini, I substituted rice "spaghetti" pasta with no real difference in the flavor of the dish.

It could be another record-setting day today, so once again, staying cool and keeping hydrated are in order!

  3. Another one to add to my list. I love goat cheese! We haven't had those temps yet in MI. Lots of humidity and rain but much cooler. Stay cool!!

  4. Nellie, I just make skillet spaghetti for lunch. Ted likes it as left overs too. So it goes a long way with us. I usually make up a small dish to take to my daughter's house too. My Teddy would gobble up that dish with the cheese. That boy is crazy for cheese. Blessings, xoxo,Susie

    Wow, that heat is heard on older folks and those poor people working outside.
