On the menu....

We have had a very busy time here for the about the past week, so I knew when it came time to prepare that lunch for the adult day care program at our church, I would need something that would come together fairly simply.  The menu I chose included Tuna-Macaroni Salad as the main dish.  I accompanied it with lettuce wedges/grape tomatoes and Hawaiian rolls (no time to make homemade bread).  The Tuna-Macaroni Salad is one that has been in my files for at least 30 years!  It comes from a church friend who is also in my Circle, and we prepared it back in the day when Circles took turns preparing lunch for the Friendship Club (older adults).  These days our church hostess takes over that responsibility.

TUNA-MACARONI SALAD

1 lb. sea shell macaroni (smallest is best)
2 cans tuna, drained and flaked
1 stalk celery, chopped
1 medium onion, chopped
1 medium size can peas (LeSeuer), drained
1 teaspoon salt
1 Tablespoon pimento
1 cup mayonnaise

- Cook macaroni.  Chill.
- Mix all else together and then fold into chilled macaroni.  Refrigerate before serving.
- Serve on lettuce leaf.

As I mentioned, we have been busy recently.  As a birthday gift, The Husband presented us with tickets to the opera when City Girl was in town.  It was a special treat as the star is an alum of my alma mater!  The music continued as the Senior Chorus, of which I am a part, performed on both Monday AND Tuesday!  Well, my Tuesday was shaping up to be one of "running," and it did not disappoint.:-)  I delivered lunch to church before going to the Senior Center where I play bridge on Tuesdays.  Then, I had to leave there for the venue where we were singing.  Then - it was back to church to pick up my things!  Now - today is a day at home, keeping up with the washer and dryer.:-)

So - another post with no picture as I wasn't able to be at church when lunch was served.  Wonder if a picture will make it here for the next post.:-)

Oh!  I might comment that I am looking at an alteration to the last recipe that might make its assembly go more smoothly.  I really think the filling needs to be "upgraded" to spread more easily.  I'll keep you posted.

  5. Your escapades always wear me out! I don't see how you keep up such a pace, and I'm happy you have the day today to gather your thoughts and perhaps take a wee nap at some point! Personally, I would LOVE this salad, but My Husband is not fond of tuna--or any other seafood--so I will probably not be doing this one, unless for a church dinner or something similar. Thank you for sharing, though, it sounds wonderful to me!

  7. Oh does this ever bring back the memories of my childhood. Mom would make this (minus the peas) and we loved it. Especially on a hot summer day. Dee licious!!! Now I need to make it soon. A big scoop right now would be just wonderful. YUM!!!
