There have been some requests for a recipe from last week. I think I have posted it before on the blog, but I will repeat it today.

1 small package apricot gelatin
1 small can crushed pineapple, packed in juice
1 cup buttermilk
4 oz. Cool Whip or other whipped topping
-In a saucepan, bring pineapple and juice to a boil. Turn off heat, and add gelatin, stirring to dissolve. Let cool, but do not let it set. Stir in buttermilk, then add the whipped topping. Mix in thoroughly. Place in desired dish. Refrigerate until set.
The above picture is the amount I made for the adult day care lunch last week, so you will have a lot less using the above recipe. This is Boy Munchkin's favorite gelatin salad, and it makes an appearance several times during the year.:-)
