Repeating....

Happy Monday to you!  Did you have a good week-end?  It was a lovely one here.

There have been some requests for a recipe from last week.  I think I have posted it before on the blog, but I will repeat it today.

In the bowl!

APRICOT-PINEAPPLE SALAD

1 small package apricot gelatin
1 small can crushed pineapple, packed in juice
1 cup buttermilk
4 oz. Cool Whip or other whipped topping

-In a saucepan, bring pineapple and juice to a boil.  Turn off heat, and add gelatin, stirring to dissolve. Let cool, but do not let it set.  Stir in buttermilk, then add the whipped topping.  Mix in thoroughly.  Place in desired dish.  Refrigerate until set. 

The above picture is the amount I made for the adult day care lunch last week, so you will have a lot less using the above recipe.  This is Boy Munchkin's favorite gelatin salad, and it makes an appearance several times during the year.:-)

  11. This sounds so delcious, Nellie. I love both apricots and pineapple and I'm sure my grandsons would love this!

    I read through your posts and saw and saw you are a fan of children's book author Jan Brett! I also love her storiesa and artwork. She illustrates such wonderful details in her artwork.
