Tuesday....

Happy Tuesday to everyone!  How is this week going for you?  As I have mentioned in previous posts, this is a busy one for me.

Today is the day I provide lunch for the adult day care program at our church.  The menu is:  Meat Loaf, Macaroni and Cheese, Sweet and Sour Green Beans, Cornbread Muffins, and Assorted Cookies.  You have seen the Mac & Cheese in a recent post, as well as the Cornbread recipe.  Also, you had a sneak preview of the cookies.   I believe  I featured the Sweet and Sour Green Beans in an earlier post as well, but I don't believe I've ever shared this crockpot meat loaf recipe.  It comes from my daughter, Munchomom.

CROCKPOT MEAT LOAF

2 pounds ground beef (I imagine other ground meat could be combined with beef; I used ground round)
2/3 cup oats
2 eggs
1/2 cup pasta sauce
1/2 cup onion

- Mix all ingredients together.  Shape into a loaf.  Place in slowcooker.  Cook for 8 hours on Low.

This is what you will need.
Because I knew Monday would be a busy day (I gave the program for one of our church UMW Circles midday), and I knew I would be away for the week-end due to the Sisters in Service Retreat, I did some advance preparation and assembled the meat loaves (2) last week, then put them in the freezer.  Also, because I know I will be busy with my own Circle meeting on Monday evening,  I am prescheduling this post before I go.  It will be late when I return, and I won't be able to spend time on the computer on Tuesday morning, either.  So, I will promise a picture of the plate as it is served.  I hope I remember to do this.:-)

  3. I have never thought to mke meatloaf like that and I may use your recipe as my boy is still here for another few weeks and muct not have meatloaf the way I make it..too much fiber for him right now. Yours looks much better for him.

  8. Nellie, I have never tried crock-pot meatloaf but my sister has and says it is just as good as from the oven. Less fuss for sure. Enjoy. xoxo,Susie

  13. I occasionally cook in my crock pot but my daughter uses hers often and suggested that I do the same.
