When we are faced with coming up with something for an appetizer, the first thing I think of is a cheese tray. It is certainly the simplest and least labor intensive. That is not the direction I chose recently, however.
This was the mixture before it was to be placed into individual phyllo shells.
This is the "lone leftover" that came back home.:-)

Sorry I haven’t been around much lately. I do try to read blogs—but just haven’t commented very much lately like I usually try to do. Please don’t give up on me. Hopefully my life will be back to ‘normal’— whatever that is (ha), sometime in January.
I did get a cortisone shot in my knee —which has helped with the pain somewhat. In January, I will most likely have meniscus tear surgery…. BUT—in the meantime, I plan to have a fantastic Christmas —and hopefully get to see my kids/grands… God is Good.

I love Greek food and love Spanakopita in phillo pastry. So easy to make and so yummy. This recipe is a close runner up and I bet they went much faster that a regular cheese tray.

ReplyDeleteThese look delicious! The only time I ever worked with phyllo (sheets) was very difficult, but the resulting recipe was gobbled up quick when served.
