When the temperatures begin to rise, we seem to want to prepare something that will not heat up the kitchen very much. This salad is a good one to have for times like this.
This recipe, from a good friend, has been in my files for at least 35 years!
TUNA-MACARONI SALAD
1 lb. macaroni (smallest is best)
2 cans tuna, drained and flaked (or one large can)
1 stalk celery, chopped
1 medium onion, chopped
1 medium size can peas (LeSeuer), drained
1 teaspoon salt
1 Tablespoon diced pimento (or 1 small jar), drained
1 cup mayonnaise
- Cook macaroni; drain and chill. Mix all else together and then fold into chilled macaroni. Refrigerate before serving. Serve on lettuce leaf. Serves 10 to 12, generously

The rain is above normal here this year. 2 inches on Saturday and rained all of last night and is still raining.

I was a bit surprised to find, when I got up for a bathroom trip at 4 a.m., to find some raindrops on our window in the bedroom! It wasn't much, and the driveway is dry this morning, but at least we got a bit of the wet stuff. This recipe sounds quite tasty, and I'll be sharing it with my Facebook friends this morning. Nellie, Yum, that is a good warm weather lunch. We used to make macaroni salad lots. I can't even remember when I had it last. The tuna in it makes it a complete meal. Blessings, xoxo,Susie

ReplyDeleteThanks for the recipe, Nellie... I love tuna ---so this would be a fantastic salad for lunch. What kind of Mayo do you use? I try not to eat the fattening kind --but it's hard to find a lower calorie one that tastes good.. Any thoughts?
