Served sliced over brown rice with green beans! Yum!
CHICKEN WITH APPLES
Makes 4 servings
2 tablespoons freshly ground black pepper (I will confess that I didn't use this much pepper)
2 teaspoons canola oil
4 skinless, boneless chicken breasts
2 Granny Smith apples, peeled, cored and sliced
1 medium onion, sliced
1/4 cup apple cider vinegar
3/4 cup apple cider
Sprinkle pepper over chicken. Heat oil in large nonstick skillet, add chicken and saute until browned. Remove from skillet. Add onion and cook until softened. Add apple slices and cook for 2 minutes, stirring the pieces constantly.
Return chicken to pan, add cider vinegar and apple cider.
Simmer until chicken is cooked and liquid has reduced.

Oh, my!! This looks delicious, and doesn't seem terribly difficult. Just might have to give it a whirl soon! That does sound like a bit too much pepper, so I think I'll just sprinkle it on till it looks right. Thanks for this recipe!
