It's All About the Food - Part I

Cornbread - one of our favorites around here!  Yesterday I promised some recipes, and this is the one for today.  Our daughter posted one at her blog,, several days ago, and it is a good one.  However, I used a different one for this time.  This came from a Southern Living magazine at least 30 years ago.

1/4 cup canola oil
2 cups plain cornmeal, white or yellow
1 teaspoon salt
1 teaspoon baking soda
2 eggs, slightly beaten
2 cups buttermilk

Preheat oven to 425 degrees.  Add canola oil to 10-inch iron skillet; set in oven to heat.
Place dry ingredients in mixing bowl; add eggs and buttermilk.  Stir until moistened.
Add oil from skillet that has been in the oven.  (There may be a sizzle, but doesn't have to be).  Stir to combine oil with batter.
Pour batter into skillet.  Bake 25 minutes until golden brown.

I cut 12 slices from this.  My husband puts the leftovers in the freezer and enjoys it regularly, thanks to the microwave.:-)

Our weather here has become much colder, and there is a mention of the slight possibility of some snow flurries in our area.  I doubt that will materialize; however, there is snow falling in the mountains at this point, and everyone is happy there.  The ski season is late because of our mild weather conditions.

Tomorrow - "It's All About the Food - Part II."

I really appreciate those of you who are following this simple little blog.  Love to have your comments, too!

  1. Cornbread is one thing that I have trouble eating "just one" of! Sometimes, when I make it with beans or soup, I end up having a piece of cornbread with butter "for dessert!" Thank you for this recipe---I have eaten yours, and it is really good! Looking forward to tomorrow's entry...
