It's All About the Food - Part I
Cornbread - one of our favorites around here! Yesterday I promised some recipes, and this is the one for today. Our daughter posted one at her blog, munchomom.com, several days ago, and it is a good one. However, I used a different one for this time. This came from a Southern Living magazine at least 30 years ago.
CORNBREAD
1/4 cup canola oil
2 cups plain cornmeal, white or yellow
1 teaspoon salt
1 teaspoon baking soda
2 eggs, slightly beaten
2 cups buttermilk
Preheat oven to 425 degrees. Add canola oil to 10-inch iron skillet; set in oven to heat.
Place dry ingredients in mixing bowl; add eggs and buttermilk. Stir until moistened.
Add oil from skillet that has been in the oven. (There may be a sizzle, but doesn't have to be). Stir to combine oil with batter.
Pour batter into skillet. Bake 25 minutes until golden brown.
I cut 12 slices from this. My husband puts the leftovers in the freezer and enjoys it regularly, thanks to the microwave.:-)
Our weather here has become much colder, and there is a mention of the slight possibility of some snow flurries in our area. I doubt that will materialize; however, there is snow falling in the mountains at this point, and everyone is happy there. The ski season is late because of our mild weather conditions.

Cornbread is one thing that I have trouble eating "just one" of! Sometimes, when I make it with beans or soup, I end up having a piece of cornbread with butter "for dessert!" Thank you for this recipe---I have eaten yours, and it is really good! Looking forward to tomorrow's entry...
