More than one....

Happy Tuesday to everyone!  Are you ready for this special day?

This year, February is a month with quite a list of special events.  Let's consider today.

This is Abraham Lincoln's birthday.  I would venture to say that many of you are able to quote some of his words from memory.  One speech that is particularly memorable is from "The Gettysburg Address." 

          "The world will little note, nor long remember what we say here,
                  but it can never forget what they, the brave men, living and dead, did here."

History has, of course, proven these words were incorrect for, while we do remember the "brave men at Gettysburg," we also remember those words spoken by Lincoln.  They appear in encyclopedias and history books and have been repeated by many throughout the years.

More words that give insight into his personal convictions follow. 

         "I am not bound to win, but I am bound to be true.  I am not bound to succeed, but
             I am bound to live by the light that I have.  I must stand with anybody that stands right,
              stand with him while he is right, and part (company) with him when he goes wrong."

When I was teaching, I had a favorite book that was available for the students.




What a difference Abraham Lincoln made in our country's history!

Not only is today Lincoln's birthday, it is also Mardi Gras!  There will be great celebrating in New Orleans this evening!  How about you?  Do you do anything to call attention to this festive time?

I have no plans to bake a King Cake as I baked Three Kings Bread for Epiphany.   There will be Shrimp Creole for dinner, though.:-)

Raspberry Roll-Ups!

Also, no Beignets here to have along with our cinnamon-spiced coffee this morning.  Instead, there are these Raspberry Roll-Ups.  When I was teaching I would take Little Debbie's Swiss Cake Rolls to school on Lincoln's birthday because they resembled the logs of his childhood home, so these roll-ups resemble a log, and they substitute for the Beignets!

RASPBERRY ROLL-UPS (recipe from bag of flour over 30 years ago)
1 cup butter
1 (8-oz.) package cream cheese
2 cups flour
1 teaspoon salt
Red raspberry jam (I used Polaner seedless preserves). 

- Combine butter and cream cheese; blend until smooth.  Combine flour and salt; blend into butter mixture.  Chill about 1/2 hour.  Roll out about 1/4-inch thick.  Cut into 2 1/2-inch squares.  Spread each square with 1 teaspoon raspberry jam to within 1/4 of edges.  Roll up firmly.  Place rolled edge down on ungreased baking sheet.  Bake at 425 degrees F. about 15 minutes.  One dozen.

Now, excuse me while I go find that second cup of coffee!:-)

  1. Oh, those roll-ups sound just wonderful!! Thank you for sharing yet another great recipe. I do not do anything special on this day, but I did get up early one day and go to the Senior center for their pancake day, which features local "celebrities" as they cook for the crowds. That was a good breakfast that day! Have a wonderful Tuesday! :-)

    Nope, no Mardi Gras here. But you have beads!!! And masks! You are set!!!

  5. for years i would always bake kings cakes for all of my neighbors. this year i made gumbo for the shelter. my neighbors are not going to be happy!

    The creole sounds pretty yummy, too.

    No, we don't celebrate this day at all. Sad but true.
