CHOCOLATE FUDGE CAKE
3 squares unsweetened chocolate
2 1/4 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter
2 1/4 cups brown sugar
3 eggs
1 1/2 teaspoons vanilla
1 cup sour cream
1 cup boiling water
- Melt chocolate and cool. Grease and flour 2 9" pans (or makes 3 dozen cupcakes). Sift flour, soda and salt. Beat butter, then add sugar and eggs, beating well after each addition. Add vanilla and chocolate. Add flour alternately with sour cream. Stir in boiling water. Pour at once in pans.
- Bake at 350 degrees F. for 35 minutes. (I checked it at 30 minutes.)
This recipe comes from a longtime friend. She submitted it to a UMW cookbook several years ago.
There is a frosting that goes with the cake, though I used a butter cream for decorating the top.
CHOCOLATE CHIP FUDGE FROSTING
1/3 cup milk
1 cup sugar
5 Tablespoons butter
- Bring to a boil for one minute, stirring constantly. Add one cup chocolate chips. Return to low heat and stir until smooth. Pour immediately over cake, and spread it quickly.

Oh, how cute!!! You are so clever with those types of things, and I have to admit that I'm just a bit envious! I wonder how many chocolate cake recipes there are in the world, anyway....this one sounds really good, especially with the brown sugar. Thanks for sharing, and I'm sure those folks at the day care were happy to have this cheery cake!
