From this....


....to this!

Are you ready for a recipe for Zucchini Bread?  I'm sure you have your own favorite one you use.  This one comes from The Inn at Gray Gables Cookbook.  It is a favorite of mine.  I have markers all through the book for those oft-made recipes - and there are many of them!

ZUCCHINI BREAD
3 eggs
1 1/2 cups sugar
2/3 cup oil
1 Tablespoon vanilla
2 cups flour
1/2 teaspoon salt
2 teaspoons baking soda
1/2 teaspoon baking powder
2 cups grated zucchni
2 cups coarsely chopped nuts
- Preheat the oven to 350 degrees F.  Grease and flour a 9x5-inch loaf pan or two 5x3-inch loaf pans.  In a large bowl beat the eggs.  Add the sugar and the oil, mixing well after each addition.  Stir in the remaining ingredients except the nuts and blend well.  Fold in the nuts.  Pour the batter into the prepared pans.  Bake for 1 hour.

  3. Nellie, My daughters have all made this, but I have not. I like it very much, so I guess that is strange that I don't make it. LOL I have made date, but, banana, and white bread. I don't make the white yeast bread any more .. Blessings, xoxo,Susie

  5. This is on my to do list today. I missed a couple days of harvesting so now, I have to be about making breads and muffins and anything else I can make and stick in the freezer with zucchini. It looks like an nice recipe.
    No plans today other than baking. :) I love baking days.

  6. I have a family favorite recipe for Zucchini bread and it also had some spices in it. Haven't seen any zucchini yet in my husband's garden at the farm.

    Today I just worked at the farm, at the house and in the office shredding old files and papers to make more room for more papers. lol.
