A new month....

 Rabbit, rabbit!  It’s late in the day, but better late than never!  That expression is a wish for a month of good luck ahead!

We were greeted with a slight ground cover of snow this morning.  At this point in the day, it has almost completely disappeared.


This is looking down our street when I went for the newspaper this morning.  Do you have snow where you are?  Do you have a favorite treat for a snow day?  I think hot chocolate is a good choice for a snowy day!  Have you ever added a scoop of ice cream to your cup of hot chocolate?  It might be a tasty experiment.:-)

We celebrated by making this a “Muffin Monday!”  Also, tried my hand at creating my own sausage by adding herbs and spices to ground pork!  All the way around, it was a great way to begin the day!

I came across a recipe that had been in my files for a number of years....Lemon Raspberry Muffins!
Fresh raspberries went in these delicious nuggets!  
Using ground pork from the meat department of the market that takes care of our curbside pickup orders, and adding seasonings as desired, gave us a sausage that contained less sodium and was leaner than usual sausage.  Not a bad breakfast for the first day of February!

Special appreciation for workers who clear the roads in snowy/icy conditions!  Be safe if you have to travel!

Be safe, stay well, and follow necessary precautions!  Then, remember to choose joy!

  1. Oh, Sister!!! That sounds like a most delectable breakfast! Could you possibly email me a muffin or three? We had no snow on my end of town, but it's been drizzly and cloudy all day - a good day for staying inside! Keep on cooking. Love you!

  2. Ice cream in hot chocolate sounds Yummy. It's kind of like having whipped cream in it. Yes, we've had snow! And I appreciate the workers that clear the roads too, they're great! Your raspberry muffin looks really good. : )

  3. We received around 4-5 inches of snow yesterday and a little more this afternoon. It's so pretty looking at the blanket of white on the sleeping garden. Your muffins look wonderful, Nellie. I've never made sausage. You are a great cook, my friend! Have a lovely week ahead.

  4. We hardly ever have snow, and it seldom lasts more than a few hours. I used to love snow, acting my shoe size not my age at the signs of the first flurry, but now, although I love to see it I am not happy as it makes my bones ache. I've brought the coffee, may I please have a muffin?

  5. My treat for a snowy day is hot Chicken soup or any kind of soup for that matter... I made Chicken soup yesterday and will have some for lunch as It's a snowy day today as a big storm is coming up the US coast. I plan to have some fresh biscuits.

    The groundhog won't see his shadow today.

    Your sausage idea sounds good to me and so does the muffin.

  6. A few days late, but Rabbit Rabbit to you , too ! Not many people do that! Your muffins look great...just took a batch of banana muffins out of the oven. Going for a walk - lots of snow the other day but now sunny and paths are clear. Then home for a cuppa tea and a muffin treat! Have a great weekend, Nellie !
