Here is another good recipe for a summer day.
It also made the trip to the church covered-dish luncheon, and there were some leftovers to bring back home.
It is a Weight Watchers recipe, and we have enjoyed it several times for the past few years.
Rather than the capellini, I substituted rice "spaghetti" pasta with no real difference in the flavor of the dish.
It could be another record-setting day today, so once again, staying cool and keeping hydrated are in order!
Lovely presentation of a delicious-sounding dish! Yep, I'm doing my best to stay cool, and my water glass is always at hand! Have a terrific Tuesday, Sister!ReplyDelete
It was a scorcher, for sure! (I'm in Knoxville). I'm hovering over my hanging flower baskets with the watering can.ReplyDelete
Another one to add to my list. I love goat cheese! We haven't had those temps yet in MI. Lots of humidity and rain but much cooler. Stay cool!!ReplyDelete
Nellie, I just make skillet spaghetti for lunch. Ted likes it as left overs too. So it goes a long way with us. I usually make up a small dish to take to my daughter's house too. My Teddy would gobble up that dish with the cheese. That boy is crazy for cheese. Blessings, xoxo,SusieReplyDelete
It looks really yummy. I wish I had some for lunch!ReplyDelete

Wow that is hot. It doesn't get that hot here.

Here it is finally getting hot. I cannot wait to start having more summery meals.ReplyDelete
It looks yummy and very easy to prepare.ReplyDelete
Wow, that heat is heard on older folks and those poor people working outside.
Hope it doesn't get any hotter. Stay cool.
I'm so sleepy after supper that I keep misspelling words. I meant to say it must be hard on older folksDelete
I'm not a goat cheese fan, but it looks delicious other than that.ReplyDelete
And it was 99 here this afternoon.Delete
I'd sure like to send you some of our rain, to cool you down!ReplyDelete
