From the kitchen....

This week seems to be passing quickly.  Wednesday already!  I hope you are having a good week.

The last post was about having no water at my fingertips.  That did create just a bit of uneasiness as I was set to do some food preparation.  We planned to visit Munchomom, Machoman, and the Munchkins on Good Friday, and I had some ideas of things to take along with us.  So - what is one able to do with no water?

Here's a recipe that has been in my files for a number of years.  I really cannot remember the source.

SUNSHINE SALAD
1 can (20-oz.) pineapple tidbits
1 can (11-oz.) mandarin oranges
1 box instant lemon pudding
1 cup quartered strawberries
1 cup sliced ripe banana
- Drain pineapple and oranges, reserving juice.  Prepare pudding using reserved juice in place of milk.  Combine pineapple, oranges, and strawberries; gently fold in pudding.  Chill at least two hours.  Add banana just before serving.

Underway!  
It was definitely enjoyed!:-)

There was some water needed here, though.  While we do not buy bottled water, we had a bottle that had been given out recently at an event we attended.  Fortunately, I was able to use some of that water to wash the strawberries before adding them to the salad.

  1. That sounds absolutely yummy, and I'm glad you had some water to wash those strawberries! We still have several bottles that we didn't use on the cruise, and I don't know when we'll get around to using them, because we don't normally use bottled water either. I'm sure the Munchkins enjoyed that salad a LOT! Have a wonderful Wednesday, Sister!

  2. I love anything with strawberries in it so that salad sounds really good to me. It is a frightening thought to think of being without water for an extended period of time.

  3. It looks good but I no longer can eat strawberries. I have developed a severe allergy to them.

  4. That sounds like a perfect dish for Spring! It is a mess when you don't have water for any length of time, isn't it? Glad you had a bottle stashed. I am copying this recipe over to my files-the kids would love this I know.
