Before we started on the day, there was a “Saturday special” for breakfast.
This is Avocado Egg Salad on Country Wheat Toast! First time for me to make this egg salad version, and I like it!
On the menu for tomorrow....Pressure Cooker Risotto with Shrimp and Herbs (Martha Stewart) and peas with mushrooms. Of course, there will be dessert.:-)

ReplyDeleteI love avocado, I sometimes like egg, but can't quite get the hang of them together. Love the idea of a shrimp risotto though, and always yes to a pudding. I don't think I ever met a pudding that I didn't like!

ReplyDeleteYour food is always so yummy. We had a BBQ yesterday with all of our kids that live here. It was so hot that I made a Smores slab pie. It was a hit too. I can't figure out why its so easy to cook for 10 adults and so hard for two. :)

We missed the Kentucky Derby, Nellie. I can't imagine no one in the stands! Unfortunately I'm not a fan of avocados, but I do love egg salad.
