That recipe....

My last post had a picture of Turkey Lasagna all ready for the oven.  The recipe for it comes from Susan Branch's "Christmas From the Heart of the Home."  I mentioned I would post it in case you are interested, so here it is.

TURKEY LASAGNA

8 oz. lasagna noodles (I used whole wheat)
1 lb. ground turkey
1 medium onion, chopped
2 cloves garlic, minced
1 16-oz. can peeled tomatoes, drained & chopped
8 oz. tomato sauce
6 oz. tomato paste
2 tsp. basil
1 tsp. oregano
1/2 tsp. thyme
2 tsp. fennel seed
1/4 tsp. red pepper flakes
2 Tbsp. fresh parsley, minced
1 egg, beaten
2 cups low-fat cottage cheese
1/4 tsp. freshly cracked pepper
3/4 cup grated Parmesan cheese
8 oz. shredded, part skim milk mozzarella cheese

- Prepare noodles according to package.  Rinse in cold water and set aside.
- In a skillet, cook turkey, onion, and garlic just until done.  Stir in tomato products, dried seasonings, and 1 Tbsp. of the parsley.  Simmer 15 min.; set aside.  Meanwhile mix together egg, cottage cheese, pepper, 1/2 cup of the Parmesan, and the remaining Tbsp. of parsley.  Set aside.
- Preheat oven to 375 degrees.
- To assemble:  in a 9 x 13 inch baking dish layer half the noodles, half the cottage cheese mixture, half the meat mixture, and half the mozzarella.  Repeat layering with second half of everything.  Sprinkle with remaining 1/4 cup of Parmesan.  Bake 30 minutes, or cover and refrigerate and bake later.  Serves 10.

Very, very good!  Very easy to prepare!  Heartily recommended!

Now, it is "catch up time!"  That will take awhile!:-)

Thank you for reading.  I appreciate your comments.

  3. YUM---sounds delicious, and more healthy than ground beef lasagna.... It's also a great way to use left-over turkey.

    Happy New Year.

  9. Hi Nellie, I am your newest follower. I notice from your profile that you are a retired teacher...my husband and I are both teachers and hope someday to be retired teachers like you! This recipe sure sounds good. I am going to try it since we are trying to cut way down on red meat so using turkey would be a great alternative! Thanks for the recipe. I am looking forward to more of your posts.
