Wacky Cake and Waffles....

 Today is National Chocolate Cake Day!  Is that something you think you could celebrate?

We celebrated Wednesday with waffles for breakfast this morning, and that has made this day feel very special!




Have you heard of Wacky Cake?  I may have featured it on the blog some time ago.  Hoping the steps will stay in the correct order with this one.







This is such a simple recipe that I don’t know why I don’t bake it more often!  Ingredients are sifted directly into the baking dish; little “hollows hold vanilla, vinegar, and oil; then, a cup of cold water is poured over all.  It can be frosted, though we prefer it just like it is, adorned with ice cream!  Sometimes I will sprinkle powdered sugar on top. 

Anyway, Happy National Chocolate Cake Day!  The recipe needs 1 1/2 cup flour, 1 cup sugar, 1 tsp soda, 3 Tbsp cocoa, 1/2 tsp salt sifted all together into the baking dish.  One Tbsp vinegar in one “hollow,” 1/3 cup oil in another, and 1 tsp vanilla in the other. Pour the water over, stir well with a fork, then bake at 350 degrees for 30 minutes!  Enjoy!

  4. National Chocolate Cake Day! That should be a serious holiday, with people getting the day off so they can stay at home and do nothing except eat cake.

  5. I apologize for omitting the size of baking dish this recipe specifies, which is 9 x 9. The one I used is just a little smaller, and it worked fine.

  6. You really feature tasty treats, Nellie! I have made a Wacky cake years ago and it's a winner.
    I think we will all be wearing a mask (maybe 2) for a good while. Hopefully more vaccines will be available to our area. Our state is lacking terribly. Stay safe and well, my friend. xo

  8. Hmmmm, I am under the impression that every day is Chocolate Cake Day. We are now being encouraged to double mask. I am concerned, afraid, worried, ashamed and disappointed with how the virus is being handled in the UK. Too little, too late.

  10. Chocolate cake is my favorite dessert.....and vanilla frosting. I've never heard of Wacky Cake before. It sure looks good. Oh, I haven't had waffles in a long time. I must get them at the store the next time.

  12. Your waffles and fruit look so delicious. And I do love the wacky chocolate cake. I have a similar recipe that I use. And no icing for us either, ice cream fits the bill.
