On the menu....

There is an addition to our kitchen this week!  Most people in our age range have probably already happily disposed of this appliance, and here we are happily adding one!😂


Now, we have never been huge pancake fans, though they were probably almost a Saturday breakfast staple when the family was still living at home.  We never had a griddle for preparing them though, using an electric skillet which could only cook four at a time.  With all our blueberries these days, I became motivated to try Blueberry Pancakes, and online ordering from Target with curbside pickup presented the opportunity to add this griddle to our kitchen.  It will be used for things other than pancakes, of course, so it’s not limited to only one function.  By the way, the pancakes were good this morning!

Moving on to plans for Sunday Lunch....on the menu will be roast chicken (baked with lemon halves in the cavity; love the lemon flavor with chicken), sweet and sour green beans, yellow squash casserole (thanks to generous neighbors who have shared their squash harvest with us), and lemon blueberry cake.  The squash casserole is one that has been a favorite through the years.

I love that it can be assembled ahead of time, refrigerated, then removed from the refrigerator about a half hour before baking.

  1. Yummy! I had a grill like that; now I miss it even though there is a griddle on our stove. My latest appliance is the Pioneer Woman Instapot. Still have to figure out how to use it!

  2. I love blueberry pancakes with blueberry syrup. We received a bottle from my daughter several years ago. It was the best. If I'm not mistaken, it had lemon in it. Maybe that's why it tasted so good. My zucchinis are not ready yet. They were planted rather late.

  5. Good evening,Sister! Those pancakes do look wonderful, but I'd replace the blueberries with chocolate chips! Maybe even a few chopped pecans for a bit of extra "oomph." If I were closer, you might have to beat me away from your door for that Sunday dinner! I'll try to behave myself and stay down here on the Gulf Coast---at least for now. Hope to be moving in just a few weeks! Love you!

  6. Once again you make my mouth water, Nellie. I have never had a griddle but I know you will use it a lot and use it well. I got a new frying pan this week, so new kitchen pans must be in the air! You use the same seasoning for your chicken as the Duchess of Cornwall, did you know? Enjoy your weekend and your delicious dinner.

  7. I LOVE a good squash casserole. We have a big electric griddle that I use, too. It is also wonderful for multiple slices of french toast! I sometimes do pieces of canadian bacon on it-keep them warm along one edge and make pancakes or french toast. xo Diana
