|Served on a Susan Branch plate!|
ZUCCHINI DROP COOKIES
1 cup grated zucchini
1 teaspoon soda
1 cup sugar
1/2 cup butter or shortening
1 egg, beaten
- Mix the above together in a large bowl.
2 cups flour (I used half whole wheat.)
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
- Sift in, and stir to blend.
1 cup chopped nuts
1 cup raisins
- Stir in, then drop by teaspoonfuls on greased cookie sheet. (I used a Silpat.)
- Bake 12 to 15 minutes at 375 degrees. Yield: 3 dozen
The Husband quickly consumed four of these after his dinner last night, so I'd say they are a hit!:-)
In past years, our zucchini harvest has not been very plentiful at all, and it is refreshing to be able to say that this year is making up for those years!:-) However, lest you think all I know is zucchini, this will be it for that particular vegetable. You will be spared the Stuffed Zucchini and the Summer Squash Casserole.:-) UNLESS, of course, you send word you are interested, and I will see about those recipes as well.
Thank you so much for reading. I truly appreciate your comments.
Next post - Missed opportunity....
This is a new one on me. I have never heard of a zucchini cookie before. I bet it is really good though. Why oh why is no one offering me zucchini this year. Last year I had an abundance given to me. lolReplyDelete
I made them the summer that I was running out of ideas for zucchini. They are wonderful. I think a lot like pumpkin.ReplyDelete
It is a very nice recipe.
I'm on my way to the kitchen to make these now. Just come from the garden with lots of zucchini.ReplyDelete
Yum! I'm on my way with the iced tea.ReplyDelete
I have never had that veggie! Maybe one day. I call squash "squish".ReplyDelete
These really do sound good, and I'm still waiting for the friends who blessed us last year to come through again! I would imagine The Husband was quite fond of these, since it's hard to miss when you have butter, sugar, flour, and cinnamon with ANYTHING!! I'll be copying this recipe and hoping for some "free" zucchini soon! :-)ReplyDelete
Yum.... They look delicious. If I weren't dieting, I'd eat a BUNCH of those cookies... BUT--these days I try to stay away from all kinds of great foods like that... Dang it!!!! haReplyDelete
You've blessed us with all sorts of lovely zucchini recipes this year! Can't wait to try them all out when our gardens finally start taking off.ReplyDelete
Ahhhhhhh, the mixed blessings of too much of a good thing, in summer harvesting. -grin-ReplyDelete
"We may be wrong and we may be right,
but we're Ewings, we stick together,
and that's what makes us unbeatable!"
A tasty way to eat more veggies!!ReplyDelete
Boy oh boy am I hoping someone remembers me when it comes to time for Sneak Some Zucchini Onto your Neighbor's Porch Day! (August 8th) I would love to make these cookies. Although I adore Zucchini bread, cookies would certainly be a nice change.ReplyDelete
Thanks for sharing, Nellie...
I'm sure these are great. :) My favorite chocolate cake recipe is actually a chocolate zucchini brownie recipe. ;)ReplyDelete
