Eat dessert first....

That sounds like a good policy to follow, doesn't it?:-)  That isn't what is followed at the adult day care, though.:-)  This is what I took for dessert on Tuesday.

There is a glare from the overhead light.:(

The participants at the day care were really entertained by this very amateurish attempt at producing a jack-'o-lantern face.:-)  Underneath this frosting was a chocolate cake. 

3 squares unsweetened chocolate
2 1/4 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup butter
2 1/4 cups brown sugar
3 eggs
1 1/2 teaspoons vanilla
1 cup sour cream
1 cup boiling water

- Melt chocolate and cool.  Grease and flour 2 9" pans (or makes 3 dozen cupcakes).  Sift flour, soda and salt.  Beat butter, then add sugar and eggs, beating well after each addition.  Add vanilla and chocolate.  Add flour alternately with sour cream.  Stir in boiling water.  Pour at once in pans. 
- Bake at 350 degrees F. for 35 minutes.  (I checked it at 30 minutes.)

This recipe comes from a longtime friend.  She submitted it to a UMW cookbook several years ago.

There is a frosting that goes with the cake, though I used a butter cream for decorating the top.

1/3 cup milk
1 cup sugar
5 Tablespoons butter
- Bring to a boil for one minute, stirring constantly.  Add one cup chocolate chips.  Return to low heat and stir until smooth.  Pour immediately over cake, and spread it quickly.

I wonder how many chocolate cake recipes there are in the world, anyway....this one sounds really good, especially with the brown sugar. Thanks for sharing, and I'm sure those folks at the day care were happy to have this cheery cake!
