There have been some requests for a recipe from last week. I think I have posted it before on the blog, but I will repeat it today.
|In the bowl!|
1 small package apricot gelatin
1 small can crushed pineapple, packed in juice
1 cup buttermilk
4 oz. Cool Whip or other whipped topping
-In a saucepan, bring pineapple and juice to a boil. Turn off heat, and add gelatin, stirring to dissolve. Let cool, but do not let it set. Stir in buttermilk, then add the whipped topping. Mix in thoroughly. Place in desired dish. Refrigerate until set.
The above picture is the amount I made for the adult day care lunch last week, so you will have a lot less using the above recipe. This is Boy Munchkin's favorite gelatin salad, and it makes an appearance several times during the year.:-)
Thank you for reading. I really appreciate your comments.
I copied this over to try it, Nellie. I bet the kids would love this! Thanks- xo DianaReplyDelete

Thanks for sharing it today.
Hi Nellie ... I just wanted to say hello! I'm sort of cleaning up after a winter of not doing that, and found your letter and was rereading it, and just wanted to say thank you for it, and for your sweet caring thoughts about all the important things we care about, children in schools, mental health, and all of that. I love your passion and share it. Happy spring Nellie! SusanReplyDelete
This dish is also a favorite of your niece, you know! I'll be saving the recipe for future reference as well! Thank you for re-sharing....I don't know why I didn't copy it the first time! See you soon! Gotta get some brownies made now... :-)ReplyDelete
