Catching up....

It has been rather busy here.  We have been working on some projects.  Perhaps you will see some of that on the blog in a day or two.:-)  What has been the most fun is that Munchomom, Machoman, and the Munchkins have been visiting!  Country Girl even came in for awhile for dinner one evening. 

Of course, there is no picture.  That is not too  unusual.:-)  This time, however, everyone was ready to grab a plate and dig in!:-)  This is a good vegetarian meal.

BLACK BEAN BURRITOS WITH AVOCADO

1/2 cup diced peeled avocado
1 Tablespoon fresh lime juice
1 teaspoon olive oil
2 garlic cloves, minced
1/4 cup water
2 teaspoons ground cumin
2 (15-ounce) cans black beans, rinsed and drained
4 (10-inch) flour tortillas
6 Tablespoons fat-free sour cream
6 Tablespoons bottled salsa

- Combine avocado and lime juice, tossing to coat.
- Heat oil in a medium saucepan over medium-high heat.  Add garlic; saute one minute.  Stir in water, cumin, and beans.  Reduce heat to medium; simmer three minutes or until thoroughly heated, stirring occasionally.  Warm tortillas according to package directions.  Spoon 1/4 cup bean mixture into each tortilla.  Top with 1 1/2 Tablespoons sour cream, 1 1/2 Tablespoons salsa, and 2 Tablespoons avocado; roll up.  Yield:  4 servings (serving size 1 burrito).

This recipe came from a Cooking Light magazine a number of years ago.  I am not sure of the month or year.

    Since I will be getting back up on that horse again. :) It was a nice long break.
    I will have to dig out my W.W. cookbooks and put away my Taste of Home and Gooseberry Patch. :)
