One more thing....

There was one more thing that I baked for the adult day care lunch on this past Tuesday.  If you remember, the menu I listed in a previous post mentioned "ham biscuits."

Just out of the oven!

The Husband says we should always try a new recipe before serving it to others.  On this particular instance,  I had not previously tried the Pineapple Casserole, nor had I tried this recipe for Sky High Biscuits.

SKY HIGH BISCUITS

2 cups flour
1 cup whole wheat flour
4 1/2 teaspoons baking powder
2 Tablespoons sugar
1/2 teaspoon salt
3/4 teaspoon cream of tarter
3/4 cup butter, cold and cut into small pieces
1 egg
1 cup milk

- Mix dry ingredients together.  Cut in butter.
- Add liquid ingredients, stirring until moistened.
- Knead to hold together, roll, and cut.
- Bake in a 450 degree F oven for 8 to 10 minutes.  Enjoy!

This was the first time that I have ever included an egg as one of the ingredients for biscuits.  I don't recall ever adding cream of tarter, either.  Also, we usually prefer no sugar added to the biscuit dough.  However, these biscuits were really tender and tasty, just the right thing to slit and slip some ham inside!  We especially liked that whole wheat flour was included as an ingredient.

The number made from this recipe depends, of course, on the size of your biscuit cutter.  The size I used was the two-inch diameter one, and I had to double the recipe.

I have had this recipe in my file for a very long time, and I cannot remember the source.  I think it was included in some promotional materials in an attempt to convince me I needed to purchase another cookbook!:-)  Just the thing I DO NOT need!:-)

  4. I have never seen a recipe for biscuits with egg in it. Maybe that is what makes them sky high. I am copying over this recipe- Blessings- x Diana ps. I don't need another cookbook either-

  6. These really do look delicious, and I'm sure everyone enjoyed them! Since I try to avoid carbs and save them for something chocolate (grin), I'll try not to make these, but they really sound different from the norm, with the egg and sugar. I also like the whole wheat addition; that makes them seem better for us, even with the butter! :-)

    Strange, even though I do not NEED any more cookbooks, I just ordered one a few weeks ago from a friend in Indiana, because her granddaughter was selling them for the color guard! Found a few good ones in there, too, by the way!

  7. What lovely biscuits. I will be trying this recipe because I can never get mine to be as big as the ones at KFC and I would love to fix some that looked like this with gravy for breakfast. They are just picture perfect.

    Biscuits here, are I think, named cookies in your country. Just a bit confusing!:)
