Chicken with Apples

Sprinkle pepper over chicken; add oil to large skillet; add chicken.

Saute chicken until browned.

Remove chicken from skillet; add onion; cook until softened.

Add apple slices and cook for 2 minutes, stirring constantly.

Return chicken to pan; add cider vinegar and apple cider.  Simmer  until chicken is cooked and liquid is reduced.

Remove from skillet!:-)

Served sliced over brown rice with green beans!  Yum!

Makes 4 servings

2 tablespoons freshly ground black pepper (I will confess that I didn't use this much pepper)
2 teaspoons canola oil
4 skinless, boneless chicken breasts
2 Granny Smith apples, peeled, cored and sliced
1 medium onion, sliced
1/4 cup apple cider vinegar
3/4 cup apple cider

Sprinkle pepper over chicken.  Heat oil in large nonstick skillet, add chicken and saute until browned.  Remove from skillet.  Add onion and cook until softened.  Add apple slices and cook for 2 minutes, stirring the pieces constantly.
Return chicken to pan, add cider vinegar and apple cider.
Simmer until chicken is cooked and liquid has reduced.

This recipe comes from the Nurse Line News, September edition, that is published by our insurance company.  I hope you try it!
