It is time for a recipe! I made this to serve on Friday when our family was visiting. Creole Shrimp seemed to fit well with the Mardi Gras theme.
I have had this recipe for quite a number of years. It is from Betty Crocker.
1/2 cup minced onion
1 T. butter (I used olive oil instead.)
1 bay leaf, crumbled
1/4 cup diced celery
1 teaspoon minced parsley
1/2 cup chopped green pepper
1 teaspoon salt
1 can (6-oz.) tomato paste
2 1/2 cups water
1 lb. shrimp, shelled and deveined
- Saute onion in butter. Blend in rest of ingredients except shrimp. Cook slowly, stirring occasionally, about 30 minutes. Stir in shrimp. Cook five minutes. Serve over rice.
